I made this for the first time last night and it is SO good. I got it from the Skinnytaste website. Casseroles and dishes made in the crock pot that yield leftovers work the best for our family. Nick and I lead crazy busy lives, and often do not eat at the same time. Some weeks Nick is not home at all, other weeks he is at home, although that still doesn't guarantee I will see a lot of him. School keeps me from having a lot of free time, and Nick sometimes works 70 hours in a week. I said all that to say, quick dishes that will make several meals are a lifesaver for me.

Ingredients:

24 oz (1 1/2) lbs
chicken breast
·
14.4 oz can diced
tomatoes with mild green chilies
·
15 oz can black beans
·
8 oz frozen corn
·
1/4 cup chopped fresh
cilantro
·
14.4 oz can fat free
chicken broth
·
3 scallions, chopped
·
1 tsp garlic powder
·
1 tsp onion powder
·
1 tsp cumin
·
1 tsp cayenne pepper
(to taste)
·
salt to taste
Directions:
Combine chicken broth,
beans (drained), corn, tomatoes, cilantro, scallions, garlic powder, onion
powder, cumin, cayenne pepper and salt in the crock pot
. Season chicken
breast with salt and lay on top.
Cook
on low for 10 hours or on high for 6 hours. Half hour before serving, remove
chicken and shred. Return chicken to slow cooker and stir in. Adjust salt and
seasoning to taste. Serve over rice or tortillas and your favorite toppings.

Sounds awesome! I love trying new recipes for my crock pot. I'm going to try out this recipe this next week. I'll let you know what I think. However, looking over the ingredients I can tell this is going to be delish.
